Prepare sous vide bath: Pour water in a container or sous vide instant pot and attach sous vide immersion circulator. Set the temperature to 140 degrees Fahrenheit.

Prepare the meat: Cut down the large meat pieces into small lean slices, separate the fat layer from the chuck roast and dispose off them. Now, cover and put the meat slices into the refrigerator.

Prepare marination mixture: Take a clean bowel except for wine and mix all the ingredients to heat them. Wait until it gets thick, then remove it from the simmer and separate the solids. Cool the mixture before coating the meat slices.

Sous vide chuck roast: Transfer the marinated meat into the plastic bags and vacuum seal them before plunging in the water bath at 140 degrees Fahrenheit temperature.

When the mushrooms get sauteed, add them with the sauce. 

 Fry the sous vide chuck roast: Put a frying pan on a burner and let it leat up. Add some high smoke point oil or butter and spread it evenly in the pan. Now, slowly place the chuck roast in it and fry it for 60 seconds until it gets golden brown.

Serve the chuck roast with mushroom sauce: After 1 minute of frying the chuck roast, take it out on a plate and cut it evenly. Now pour the mushroom sauce on it and serve it hot.
